Cornish Hens with Lemon and Prunes Over Vermicelli

 

Dad loved Cornish hens. Even though they have very little fat, when cooked properly, they have the most amazing flavor and the crispiest skin. That is why they were one of his favorite things to eat. I added prunes to give the dish a bit of sweetness and lemons to give it a wonderful citrus flavor. Placing the hens on top of the vermicelli allows the noodles to soak up all the wonderful juices.
