Asparagus with Feta

 

Mom loved using asparagus. She would chop them up and put them in pasta or sautee them with other veggies to make a wonderful side dish. She often added them to omelets and that was always a hit. Her favorite way of eating them though, was on their own with a simple vinaigrette. Ultimately, this was ours as well. Adding the feta came later on. It brought out the sweet flavor of the asparagus.
