Merguez (Spicy Sausage) Sandwiches

 

Indigenous to Morocco, Tunisia and Algeria, these sausages or merguez are bursting with flavor. Usually made with ground lamb and beef and beautifully seasoned with cumin, chili pepper, or harissa, garlic and many more spices. Growing up, we’d go to Long Sault Beach where they had tables and areas to BBQ. Dad would grill the merguez and mom would prepare the baguettes. She also made a ton of sides, each tastier than the last. While the adults were preparing the food the kids would go swimming or play on the beach but as soon as the sandwiches were ready we all stopped what we were doing and ran to get one.
