Grilled Eggplant with Hummus Sauce

 

Mom always had a batch of fried eggplant in the freezer. She would make a ton just to have them on hand. Having them ready meant that she could pull some out to eat anytime. They were perfect in salads, cooked dishes or just salted in a sandwich. She especially did this just in case my daughter would drop by unannounced for dinner. There are so many ways to enjoy this wonderful and versatile vegetable, frying is but one. Eggplants are also one of my top favorites and can eat them any day and in any way they are prepared.
