Mom’s Lemon Chicken with Potatoes

 

Fridays were always like a smaller version of the “Holidays”. Not as extravagant but more food than the rest of the week. Along with the Moroccan fish and all the salads there was always a red meat or poultry dish. Mom would prepare most of the cooked salads on Thursday nights after work so that come Friday she didn’t have as much to do. It was simple, delicious and one of our favorite dishes. Also, having it in the oven for an hour gave her the chance to do other last minute things. The lemon gives so much flavor to the chicken and the potatoes. It makes it hard not to want seconds!
