Pearl Couscous with Dates and Olives

 

Pearl couscous is just a larger version of Moroccan couscous except that it is cooked like pasta as opposed to steamed or letting it soak up the liquid, like its smaller version. In this recipe I season the pearls with spices commonly used in Moroccan cooking and add ingredients that I love like chopped dates, tomatoes, olives, coriander and of course lemons. The mélange of all these flavors gives this dish its unique taste that will make you go for seconds and even thirds.
