Paprika Salmon with Chickpeas and Coriander

 

Fish was a Friday night staple in our home. Mom usually made it for us to eat on its own, then she would serve meat or chicken as a second course, but for this one she added chickpeas to make it a complete meal. This combination is so good and when you add the red peppers and the rest of the spices you get a wonderful pop of color and flavor.
