Spicy Tuna and Egg Sandwiches

 

I love sandwiches! You can fit so much into one bite. These are particularly special to me as they remind me of when I was 19 years old. My parents and I were visiting family in Nice, France. We were relaxing at the beach when I saw a food vendor walking around. I went to see what he was selling and they were individually wrapped bundles. I asked what they were and he told me they were “Tunisian sandwiches”. I bought one for each of us and my parents were so happy as they recounted how they would eat these all the time while growing up in Morocco. I make these once or twice a year. They are the perfect food to eat while sitting out on a large blanket enjoying the beautiful summer weather.
