Roasted Eggplant with Cumin Chickpeas

Mom cooked a lot with eggplant and chickpeas. They are also commonly used in Moroccan cuisine. This dish includes both and they happen to be two of my personal favorites. I love the way the chickpeas compliment the creaminess of the eggplant. Add to that a wonderful crusty bread and you have a perfect combination.

Maman cuisinait beaucoup avec des aubergines et des pois chiches.  Ils sont également couramment utilisés dans la cuisine marocaine.  Ce plat comprend les deux et ils se trouvent être deux de mes favoris.  J'aime la façon dont les pois chiches complètent le crémeux de l'aubergine.  Ajoutez à cela un merveilleux pain croustillant et vous avez une combinaison parfaite.
